What I have always asked myself having used reaktor a lot and never max: What can Max do (better) Reaktor can not?

or is it just about taste and workflow?

imo, reaktor is less flexible than max because it lets you only manipulate sounds.

Even tough I haven't used reaktor a lot thus I don't know its real capabilities.

The MIDI implementation of MAX is more solid and transparent when building modules than Reaktor. It is also more stable I find. All of the data in MAX is nearly entirely transparent in terms of interpretation and application to any module within. I have hit walls in Reaktor that I haven't hit in MAX, but I just supplement my Reaktor ensembles with things I cook up in Synthmaker.

They all have a place. Reaktor is more friendly yet seems more CPU intensive when doing the exact same thing as MAX is doing. MAX has never crashed on me when I got a nutty idea, Reaktor has.

Reaktor doesn't like my most interesting ideas, and MAX pulls up a chair and leans in real close with rapt attention.
