What exactly do these do?

they don't do EXACTLY anything. GENERALLY, however, they enable you to communicate via MIDI with formerly non-MIDI things. still has to be electronic, sadly.

example: if you're building an organ that plays music with propane pipes and fire, you'd use something like this to trigger the appropriate set of pipes for each note.
