i love toasting my nuts... i also do this for asian style cooking. roasted pine nuts, garlic, chili, soy and egg fried rice! yum.

also i discovered the best thing ever (possibly not good enough for it's own thread but definately good enough for some bold type) for a bit of late night snacking...

toasted pita bread and a big tub of roasted jalapeno humus.

Ever had candied nuts? I used to work at a restaurant that candied walnuts and they spiced them so they were a little spicy hot. Amazing. Restaurants usually put candied nuts on salads. I love them. You boil the nuts, then toss them in powdered sugar and deep fry in olive oil.
