i made Scallop and Corn chowder today. I cooked bacon and used the fat to cook the onions, leeks and garlic. then i made a roux with the extra bacon fat. lots of heavy cream, chicken stock and then fresh bay scallops. after all was said and done, i garnished with the chopped up cooked bacon.
