A few questions

What equalizer should I pick for iTunes when listening to like IDM/ambient techno? Right now it is on flat.

Also - is BoC IDM? I need to properly tag my shit

I tag all IDM as electronic too. I may use the term IDM in conversation to be more specific, but not in my tags.

I manually adjust the EQ, basically like Mesh Gear Fox said. No presets. I would keep it flat but my speakers aren't the best, so a little enhancement helps. When I use my headphones I keep it flat/off.

keep it flat and buy a good set if you listen to this stuff. good sets aren't *that* expensive these days. not unless you're into the whole snake oil stuff, where your cables should be pure gold, or anything like that.
