Also; make the batter mix atleast half an hour before and sit in the fridge, because the starch has had more time to absorb the liquid, and air bubbles to disperse.... I've broken it slightly and go for a savoury main and a lemon and sugar for desert [well probably eat 10 in all] Spinach + a cheese is nice. Or spinach + a cheese + fried mushrooms. Bacon and maple syrup. Lemon and sugar. Will go for a chocolate and ice cream crepe if I'm on da continent but not on shrove Tuesday in the UK.
