Clarified butter is butter that has been rendered to separate the milk solids and water from the butterfat. Typically it is produced by melting butter and allowing the different components to separate by density. The water evaporates, some solids float to the surface and are skimmed off, and the remainder of the milk solids sink to the bottom and are left behind when the butter fat (which would then be on top) is poured off. The components that are not butter fat are usually discarded.

You really can't beat the classic, just plain fresh crab with a crabsworth of butter.

 

However, I had a variation of this crab and avocado salad once and it was fucking delicious.

Yeah same in Korea. Since Seoul is not a port city, you might have to wait up until 4 hours from being caught, but they transport them in these huge trucks which are basically water tanks on wheels.

get some big artichokes, cut off the stems and about an inch off the top, put them in a pot with about 2 inches of salted water in it. cover and steam them until you can stick a fork into them with little resistance. hallow out the inner leaves and hair, leaving only the meaty leaves around the sides and the heart at the bottom.

 

separately, saute some onions or shallots and minced garlic in butter. when they're soft, add some dry white wine and cook the alcohol off. add a hefty portion of crab meat and saute until about med. rare (but don't cook all the way). make sure the crab is sufficiently coated in butter/garlic/onion mixture. season with some garlic powder, salt, pepper and a little thyme, finish with a squeeze of lemon or lime juice (but not too much as the wine adds some acidity as well).

 

take that crab meat, butter, onion, garlic and stuff it inside the hallowed out artichoke, feel free to be as liberal with the drizzling of the butter/wine sauce over the artichoke as you see fit. grate a little bit of gruyere cheese on top of that. sprinkle some bread crumbs on it and drizzle a little olive oil over the whole thing. stick it in a 350 degree oven for about 15-20 mins (to give a nice crunch to the bread crumbs and finish cooking the crab through).

 

fuckin' delicious. use the crab concoction as a kind of dip for your artichoke leaves (you basically use your top teeth to scrape the meat from the inside of the leaf, if you've never had artichokes this way) and the combo of the crab with the artichoke heats is bomb.

 

this recipe works just as well with lobster.

Thanksomuch is right.

 

I live on the Eastern Shore, and we fucking KNOW our crabs. If there is only ONE thing the Eastern Shore knows, its motherfuckin' crabs.

 

Unless you are a complete pussy and want to glaze everything with nonsense, you want to eat crab with old bay and thats fucking IT....sometimes not even Old bay, but it gives off a great aroma and adds a nice little spice to it.

 

Soft Shell Crabs are my weakspot.....ill fry up those motherfuckers without flour and eat him..goddamn crabs are the best.

 

 

Seriously though, anyone that says they know a thing about crabs and doesn't live on the Chesapeake Bay is lying to you. Straight up.

my cousins husbands family live in port coquitlam and when i was there for about a week, for their wedding, his father took us out on the water(ocean) and we did the whole crab trap thing. for dinner there were so many fresh crabs, amazing. plus i'd never ate crab before so yeah, lots of melted butter too... fuck me man good times
