opeth and porcupine tree have some good mellotron shit on a few of their records. check out "Damnation" by Opeth (great album full of mellotron) or any of their post-2001 stuff (all great). If you can tolerate the cookie monster death metal you'll be rewarded.

 

As for Porcupine Tree, I'm not sure I can think of an exact song or record but their discography overall is pretty good. In Absentia and Signify are my favorite records by them and I think there is some mello on those.
