for the subs, a lot of the time it's a simple sine wave modulated by a LFO. or a bunch of em with a filter

Pretty much. Mixing and filtering is a huge aspect of it. The original scene was very reliant on dubplates so that tracks could be tweaked until it sounded right. That sums up Skream, Kode9, and Mala's methods. 808 bass and other drum machine hits are used too I'm sure, I think that's part of Loefah's style. I know Benga and Skream used the Albino vst for their basslines. As far as percussion goes, Mala and Kode9 make sure their kick drum hits aren't in the same range as the subbass. That's why early "classic" dubstep sounds so much more spacey and, well, dubby than the brostep output. You could probably find a lot of info in interviews with those artists and certain older threads at dubstepforum (they've archived many thank god, because it's hopelessly browsing through Skrillex production threads otherwise)
