I think mushrooms and canadian bacon are two of the best pizza toppings. I like fresh basil though a lot as well.

Pizzas are in transit to my house currently, and since theres 10~ relatives here you can be fucking sure that shit is going to be plain cheese / pep.

 

I always get chicken, onion + bacon / sundried tomatoes. That shit is wild.

indeed i'm inclined to concur. cheese pizza priorities should proceed from the bottom up. the dough is by far the most important component. crunchyness, thickness, breadyness and dustiness are paramount parameters. from here on we proceed to examine the tomato sauce layer - it should be thin, almost non-existent and definitely not overwhelming, BUT it should have a definite tangy prescense. some sweetness is appropriate but tangy spiceness should be the main character, preferably with notes of sundried tomatoes and red pesto. we have now arrived at the stage that most people consider the crucial part of the package - the curdled milks. there are no guidelines or set rules except absolute freshness and balance - the exact composition of cheeses is up to personal taste. i like the intense funkiness of a good blue d'avergne or even a blue stilton - without losing track of the balance! so make sure to include mozzarella or young cheddar for contrast's sake. goat cheese, while seldom seen, is actually a very suitable cheese IF used in moderation, and could be replaced by a more subtle washed-rind cheese like a good limburger or a not-too-crumbly munster. the importance of the top layer, which should consist of oil & spices, should not be underestimated. premium olive oil should be used - no exceptions, no excuses. the dime a dozen oregano is what puts most carnivores off cheese pizza's - feel free to substitute coriander, basil, or even cumin to add depth and complexity.

i had a pizza with gruyère on it. it wasn't just cheese, it has rosemary and prosciutto -- it was awesome. but i'd never had that kind of cheese on a pizza before.

 

 

maybe it's buried somewhere in this thread, but what's the weirdest kinds of cheese you've had on pizza? i've had goat cheese.

Years ago I once put spaghetti, meat ravioli, and cheese ravioli on a pizza. It was pretty awesome.

 

I also made a pizza that made me shit fire. It had banana peppers, jalepano peppers, cheyenne pepper, black pepper, crushed red peppers, tobasco sauce, and garlic [which isn't spicy, but still balls outta control]. Basically anything spicy in the store, I put on it.
