I can't imagine not using fresh garlic. heaven is one massive smashing and opening up a garlic echoing for an eternity.

yeah knives. everytime I use a good knife I think of the quote in commando about warm butter. I got a carbon steel knife for christmas. it took me about 5 minutes to chop the very tip of my thumb off. hilarisad. awesome knife though!

I finish with it-- but cook with it too, it's just that that flaky texture gets lost sometimes when you cook with it.

It is true that all bacon is delicious, with the exception of microwave bacon which I find very upsetting.

However one should not discount the joys of fine pork belly.

I like to cut pieces from the slab about a centimetre or more in thickness and fry it on med/high until the outside is slightly blackened. The inside stays slightly rare so you get the best of both worlds, a delicious charred crunch with a soft juicy tenderness beneath.

It is also unbelievably good on a freshly made burger.

Also, get the Modenese style of aged balsamic vinegar. Slightly sweeter, but also a more complex taste. Goes incredibly well with potatoes.

We finally bought all the spices to make our own curry paste, and our level of Indian cooking just went up five. Definitely worth the splurge.

 

The same goes for saving your bits & bones to make your own stock.
