Made a spectacular split pea soup the other day. Couldn't remember if I actually like it but I'm making some dietary changes so it's time to get creative again. Turned out way better than I expected. 

Simple recipe. Dried split peas, soaked overnight and rinsed well. Chicken broth (this is the key - use home made broth). Onion, garlic, pepper. Didn't even use any herbs. And bacon. Traditionally you would use ham but it's what I had. And it's damn good. 

Dessert, which is Lagavulin 16 & Cote d'Or Belgian chocolate.

2 new soups this week. 

Soup 1:  Bone broth (beef) base with quinoa, chickpeas, corn and butternut squash. Onion/garlic/sage for seasoning.  Vegetable soup but not vegetarian. Back in the day I had a hippie friend who once talked about a "solar plexus chakra soup" that was much like this (i.e. lots of yellow foods) and so this was loosely based on that. It's quite good, but the bone broth is really the key.

Soup 2 was meant to be more like a stew but the end result was still quite liquid-y, either way it's good on rice or pasta. Chicken thighs slow cooked in pureed tomato with basil, rosemary, onion and garlic, 2 kinds of white beans and 2 eggplants, chopped. Added a bit of the juice from a jar of olives for additional flavour depth. Had this with pasta and crumbled feta and it was primo, but now I'm out of feta.
