imagine if you spent all afternoon cooking a roast, and then when taking it out of the oven to say, baste it with it's own juices, it somehow fell onto the floor, getting ruined in the process - how quickly would you be re-making the roast in time for dinner, let alone the time you'll spend cleaning up the mess?

Or, a very slow-cooking roast - you know the longer it's in there, generally the better the outcome is. I love it when meat just falls off the bone.

 

that depends entirely on oven temperature, environmental temperature, starting temperature of the meat, not to mention oven geometry, meat thickness and so on. and you gotta sear first. i would wager that the sandisons are master basters, so i'd assume there's plenty of that as well. i'm more of a spice rub man, myself.

 

oh and a roast that takes four years to cook is either a) a brontosaurus or b) spoiled.
