Never rode the shinkansen. Heard it's expensive af. But I did ride on the now-decommissioned sleeper train directly between Sapporo and Tokyo.

It’s worth it. Not too expensive either.

If you’re talking just a single return trip from say Tokyo to Fukuoka, then probably better to take a plane, budget wise.

If you’re traveling in Japan as a tourist, buy the Japan Rail Pass.

You can enjoy the phenomenon sheathe described for the price of a simple station-to-station fare. Like ¥170. Just have to time it right.
