Matthew Herbert - Plat du Jour

It comes in a little book-like cd case and goes into detail about the artwork. Apparently, the photos were made from food dyes that are prohibited in most countries. It also details what he sampled for every single song and has a little story about some of them. Great album.

Not sure if it counts as a "cover," but the viewfinder for vsnares "giant alien force" is pretty awesome:

I also really really love the LP sleeve to AE's chiastic slide. Images of the cover look really boring, but there's a lot of detail missed: they used a clear & shiny overlay that adds a lot of texture when you view the sleeve at an angle. Also, they printed the inside of the sleeve too, way down in the spine.
