I had a bit of pizza rage tonight, I bought a stuffed crust chilli beef pizza and the ingredients + cheese were all in the middle, the crust must have been 1-2 inches into the pizza... I mean there gets a point around 1 in inch in where you're thinking 'this isn't crust, this is just empty pizza'

I think you can only add an "e" to potato when saying "potatoes".

There are better California style pizzas than California Pizza Kitchen, it's just kind of a mass-market version; sort of what pizza hut's "pan pizzas" are to Chicago stylee. Or the stuff you get at those airport Wolfgang Puck's.

 

Part of the appeal with the California pizzas is really just the wood-fired aspect (I'm not even sure if CPK wood-fires) plus some combo of old-school and fusiony toppings. So they're more of a variation on neapolitan than anything, but with freedom to break away from the strict Specialità Tradizionale Garantita rules.

 

But, I dunno, that could just be my take on some of the local LA places. I'm not really convinced that there's a California Style.

 

In LA you have a weird mix of cheapish local places that do their own thing, sometimes terribly, sometimes extremely well, and then the rarefied michelin star places. I'm sure Pizzeria Mozza is wonderful, but it's not every day I want to, or can, drop $80 on a little pizza for two outing, even if it offers me a glimpse of Mario Batali's crocs.

New York has the most uninspired, boring and predictable za on the planet. I can enjoy a NY slice from time to time but there is nothing to it. White flour, tomato sauce and mozzarella. The majority of the places here (we are talking thousands) all make it exactly alike.

I only eat slices here when I'm either in a big hurry or if I'm poor. Even then I still can't really justify paying more than $1.50 for a slice.

 

FYI, Chicago.

Get yourself a slice of cheese there and come back to me.

Obviously, Chicago deep dish is amazing, but at most places, even the thin crust is off the chain. The secret... Motherfuckers in Chicago use herbs to make it taste different from the box you get it in.

 

On a related note, I try not to order Papa Johns too often (although I always choose it over ordering a whole NY pizza, any day) but I have discovered the best way to order from them...

What about multiple-cheese type pizzas? Do those fall under the parameters of the topic subject?

 

Personally, I think multi-cheese pizza is great - bit of parma, asaigo, mozz, and provo really make the grade, IMO.

Excellent. Ever try fresh basil on a pizza? Just take some fresh basil, tear it up roughly over the pizza, and enjoy. Tasty as FUCK.
