pho

i had the best pho of my life in a little place in san diego across the street from a mall. i was only in town for a week but i think i had it 3 or 4 times. just fucking perfect - so clear and fresh-tasting, and somehow also hearty and satisfying. (probably because the bowls were as big as my head.) fresh thai basil has to be one of the most invigorating flavors in the world.

alright... i see from Fred's recent thread and the history of pho and watmm. it seems that i've been the only one to have a bad experience with pho. the only time i've eaten pho was sometime in 2001-2003 when i worked in santa ana, ca. i went out for lunch with a vietnamese co worker and he took me for pho. i don't remember what it was i ate, but i didn't like it at all. and since then i've stayed away from pho.

so... maybe it was a bad restaurant since that is pretty common in any type of foods (bad mexican food, bad italian, etc.). I'm gonna give pho the benefit of a doubt and say that it was the restaurant i went to about 8 or so years ago that sucked.

so i ask the watmm pho peeps. what are your favorite pho dishes? and what would you recommend to someone who has no experience with it? do they serve pretty good chicken? cuz that would probably be my first choice since i don't like shrimp looking at me while i eat them.

my vietnamese friend brought me to a restaurant and we got pho once too . it was really bad it tasted like chemicals and poison. he said it was just bad pho

so i dunno

All i know is that i love pho, and no it doesn't rhyme.

there are 3 places between me and my bus stop to work that serve pho. and they are all awesome. i've discovered that each day i don't eat pho i need it more. it is though i am a zombie, lusting after untainted human brain and plasma matter, killing and gorging and often as i can. I can't get enough, blood on my face, frozen heads in my freezer. and then i eat pho. i realise that pho is much better than uncooked vital human organs. i've also recently come to terms with the fact that i am a cannibal.

lol, I wish I could still smother everything I eat in Sriracha but it burnt a hole in my stomach. I used so much of it for 2 years and then all of sudden I started getting horribly painful stomach aches anytime I used anything like it on my food.

I tried to make my own pho recently, with chicken. Is that pho ga? Yeah it was great and I made so much I fed five people and ate the rest myself for the rest of the week. I can't remember what went in exactly, I looked at a few different recipes. I baked some drumsticks and shredded off the meat and there was a whole bunch of celery and onions and carrots in stock which I then sieved out. Some lemon thyme I think and a load of beansprouts added near the end. The best thing about it is that it is filling but you can eat when you don't neccesarily feel that hungry, and you don't feel bloated after.

Why did I just ramble about pho in asymm's thread when there is a perfectly good pho thread here?

this isn't entirely accurate, surprisingly

Pho Tai - is with rare steak, you push it in the broth to cook.

if this is too complicated get something like:

Pho Chin - beef brisket.

Avoid Bo your first few times getting pho or else it will confuse you. It says its meatballs and its not, it turns some people off.

Bun Thit Nuong Cha Goi - bbq beef with rice noodles (non soup) is another safe dish.

pho can be awesome or watered down shit depending on the place....like someone here said, I need to learn how to make it myself...and yeah always go for the steak pho...best one hands down.

I had some awful Pho in London once, but yeah I suppose it all depends on the restaurant, ingredients etc.

I normally stick to Chinese but that can be fatty and greasy as shit too sometimes.

i want to stick with chicken... i think what i had last time was beef and it was bad! i've had other bad experiences with beef at other establishments.

Good Pho is great, it's the most nourishing thing ever

Go to Pho Cafe in Silverlake if you're ever in the area; it's cheap and good and. . . overrun with hipsters, but it's good.

Also, fuck you ET, you may get loads of MSG up in Dinglestank, Canada, but good pho isn't loaded with MSG. And motherfuck your first hit is from Rense, jesus fuck, that's some fine peer-reviewed shit right there.

proper pho should not need msg. you make the broth with bones and bone marrow, sugar, some fish sauce, and spices. anyone who has ever made stock from bones before knows how rich of a flavor you can get without chunking in msg.
