pho is as risky as any other food -- any restaurant can add msg to any dish if they want. msg is not needed in proper pho. it's in a restaurant's best interest to not kill off their customers. vietnamese are proud about their national dish and pho restaurants here serve to a largely vietnamese-american patronage. there's no reason to add dangerous chemicals. just go away and let us enjoy our pho. we've been warned, etc.

 

a-head, try the chicken (pho ga), and make sure you add plenty of fixins they give you. and a little sriracha and a little hoisin. or a lot. my first experience with pho was many years ago in dallas, a place called pho huy. a high school friend and i went and tried some, and i got mine with tripe, and bled out of my nose into the bowl (unrelated i think). i didnt like it. the blood made my broth too irony. anyway i gave it another try, so should you!

There have been a shit ton of independent studies about MSG that show it to be harmless in small and large amounts. Most of the sickness people feel is a response to its taste and/or placebo.

most of the places i've gone to have a sign that says NO MSG or something like that. but as you said just ask. i'd eat it anyway.

Then you need to stick with Pho Ga (Ga being the Vietnamese word for Chicken). Usually thinly sliced breast meat, cooked well (not in the broth like other beef-based Pho). Trust me - throw in the Jalapenos, the herbs, the mung beans, squeeze some lime over it - it's like the best Caldo de Pollo your Abulea made.

i've never had oxtail soup but from what i know about it it seems a far cry from pho.

I haven't been to Mai's in awhile... there's a little Pho shop around the corner from where I live that is super cheap, super good, and super fresh.
